"I tried it for the first-time last year. I was a bit skeptical, so I did it as a trial. I was pleasantly surprised! I waited 6 months before trying any and by the time I finished them up they had been in the lime water 8 months. I found the yolks to be a bit soft but as long as the jar smelled good, the eggs were good. I had one egg have a hairline crack that I missed and so that jar was *bad* but all the rest I used up. I used them just as a normal
fresh egg except for boiling them. I didn’t want to trust the shell strength for that one. I preferred the duck eggs over the chicken eggs. I think the thicker shells on them maybe helped keep them fresher longer. The one thing I learned for this year about glass storage…only use containers that I don’t care too much about because they will have a tough mineral lime ring on them. Some use plastic containers, but I prefer glass.”"
